The reason you put potatoes through this instead of mashing them is because mashing them creates significantly more gluten formation causing the mashed potatoes to become gluey rather than soft and fluffy. Ricing them allows you to almost not mix them at all and retain perfectly light and fluffy mashed potatoes which makes a huge difference in texture. Another popular dish this is used for is making gnocchi because you don't want any extra gluten formed when mixing about 80% riced potatoes with 20% flour. You have to fold it together with a beaten egg until it is just barely combined otherwise the gnocchi turns out rubbery. These are just the 2 main reasons, but this is used to make many other popular dishes too which can't be made properly without it.

This is the best kind of ricer because the handle is 100% steel and all 1 piece. Most of these have a plastic handle end attached to the steel part that is near where the handle gets to the pot, and they always break at that area. This one appears to be a 1 piece design where the handle is all steel so it is actually strong and won't break. I got 2 different brands of the cheap half plastic handle versions that said it was stainless steel (half was, so it technically wasn't false advertising) and they both broke within 6 months, then I paid $34.99 to get one that looks exactly like this one with a full stainless steel 1-piece handle design and it has worked for over 5 years without a problem.

I still would prefer one with a solid handle, not a curved piece of stamped steel.

I've never seen one with a solid 1-piece cast metal handle for anywhere near the price of this one, have you? Please link it if there is one for around the same price as this. This design works great and the handle is extremely stiff. I've crushed semi-cooked hard-center potatoes through it and the handle doesn't flex so it can take some serious force without flexing or bending.

Potatoes don't have gluten, I think you mean that it prevents excess starch release

I agree with much of what you're saying.


But to be clear, potatoes don't contain gluten.

I can't tell you if this is a good deal (abut for $13, why not?) but I can tell you as someone who has made their share of mashed potatoes in the past a ricer is going to take your potatoes to the next level. Not only do you not release the starch, but it guarantees perfect consistency every time.

I just looked, the one I bought was an OXO that costs $35--its very good quality, but if I didn't have it already I'd get this one.
