Sunex has some great stuff if you find the Taiwanese versions.
It is pretty much peak America that we treat water heaters as disposable when unscrewing and replacing ONE part could make them last decades.
Having said that those things are screwed in tight. The trick I found that worked is turn off the power to the tank. Partially empty the tank. Let the tank cool for several hours. Put ice in a plastic bag on the sacrificial anode. Let that cool for awhile. Then use an impact driver to get it out. The ice on the anode is a nice little trick.
When you put the new sacrificial anode in tighten it a lot or it will leak. Fill the tank with water before sending electricity to the tank. If a heating element is not submerged it will quickly be damaged if it receives power.
Observe the tank for any signs of moisture for a few days before calling it good.
My anode was under a plastic cap and insulation. I took the cap off and dug out a bunch of foam. When I was finished I put the cap back but did not replace the foam. Within a day I could see condensation on the semi-clear cap. I removed it and tightened the anode. I let everything air out and replaced the cap a couple of days later. Condensation appeared once again. I had to tighten the anode one more time. It stays dry now.
