That's actually plenty of power for a Sous Vide machine. Besides, calling a Sous Vide machine "turbo" regardless of watts is an oxymoron. Sous vide machines no matter the wattage are slow cookers. They cook slow with very low heat, so calling one "turbo" would be like advertising a "high-speed simmerer". The only thing higher wattage will do for a sous vide is speed up how long it takes to get the water to temp, but when sous vides cook at around 160°F give or take, it doesn't take much to get the water to temp. Even the highest wattage machine available won't speed up the actual cooking process over a low wattage one.

Per Wikipedia: Sous vide, also known as low-temperature, long-time cooking, is a method of cooking, invented by the French chef Georges Pralus in 1974.

Thanks, but It wasn't an update. My comment was a response to somebody thinking 1100 watts isn't much & I was explaining why it's more than enough for Sous Vide, but what does you only grilling at 800°F have to do with anything?

We have this. We like it so far. The turbo is actually kind of a cool feature. Usually, you set a temp and then you wait. Once it his temp, then you put your food in and cook at that temp. Turbo means you put in your food as you turn it on. Somehow it intelligently calculates it so it's like your cooking at temp already, so overall cook time is shorter since you're not waiting for the water to heat up. It's not significantly faster, but it is faster.

You can put your food in any sous vide cooker as you turn it on. That's not a feature of "turbo". How fast it heats up is solely dictated by the machines wattage and no machine can calculate colder water to cook like hotter water before it gets hot. That's absurd and breaks the laws of physics. A higher wattage machine only allows you to heat water faster, that's it. And when you're already cooking with a low temp slow cooker Sous Vide that typically takes hours to cook something, is shaving off 10 to 15 minutes of time really all that meaningful? That's assuming it took 15 more minutes for your water to reach temp over a higher wattage machine, which is probably a generous number.

they obviously haven't done a good job marketing this Turbo feaure because everyone in this thread seems to not know what it's actually doing. it actually heats the initial cook period to a couple degrees HOTTER than your desired cook temp. so it basically brings your meat/whatever you're cooking up to temp much quicker than before. it has nothing to do with the wattage or the fact you can place the item in water before it comes to temp. they claim it can cook thing up to 2x the speed, which to me is a claim with huge asterisks that should be placed on it. for tough cuts of meat, time is your friend, not "cooking it faster." look up delta-t sous vide cooking -- it's basically what they're doing under this "turbo" name

Which defeats the purpose of cooking at lower temps. Of course stuff will cook faster at higher temps but thats not what Sous Vide is suppose to do. The word "Turbo" shouldn't be used with Sous Vide. Per Wikipedia: "Sous vide, known as low-temperature, long-time cooking." So when it doesn't take a long time is it even Sous Vide anymore?

I don't disagree with you. But it's also not a new concept. Like I said, look up delta-t sous vide if you really want to know more about it. I think it's one of those concepts which might work well in certain situations but not others, and dumbing it down to this "turbo" concept is stupid, but what else can you do to differentiate yourselves in these machines nowadays...

That makes sense. I had to look it up. It's interesting. To me it's kind of pushing the boundary of what they should be able to call Sous Vide but it is what it is. Thanks for helping clarify what Turbo means in relation to Sous Vide cookers. Apparently they call it "cooking sous vide with ΔT" but I can understand why they just dumbed it down to calling it "turbo sous vide". It's layman's terminology.
