It is used in restaurants to prevent burger patties from contracting into oblongs while cooking, so that they finish flat and at proper bun size. However, if used too aggressively, it squeezes the juice out and results in a dry burger.


At a place I worked as a kid, the cook added weights to his presses to the point where he could just set it on top of the burgers and ignore it until flipping or removal time.
