I don't know man, that's little more than some dudes opinion. He talks about the clarity of the broth and the side by sides look indistinguishable. I'd also argue that the texture of the noodles changes rapidly and depending on which you cooked first, you'll have some differences when you finally go to eat them both at the same time. Just sitting in the hot water an extra 5 minutes will change the noodles a lot. I get the feeling this is just one of those Americans that has fantasies about Asian countries.

These are very hot. I like hot. These were too much for me. I am using just the noodles now and cooking them with chicken stock, soy sauce, and a little Yoshida's. The kids love it. The powder though is uncomfortably hot
