How does this not have 10gbe ethernet? I think other TB5 docks have this at least.

I have 2 TB5 docks from Anker and Lexington and neither have 10gbe, they both have 2.5gbe

It should, you'd have to run either 1 display through the displayport and 1 through usb-c to [dp/hdmi/usb-c] or both usb-c. And as you probably know, Mac gets a little funny about multiple displays and what is capable depending on the silicon you're using.

I think you have to make compromises to add 10 gbe - maybe the Gen 4 expansion on this hub precludes 10 gbe.

I think you have to make compromises to add 10 gbe - maybe the Gen 4 expansion on this hub precludes 10 gbe.
The Sonnet has SSD slot but only Gen4X2. This one is Gen4X4 so much faster.
