I ordered this yesterday when I saw it returned in stock and here's why: A few years ago I bought one from Amazon, tried on a few knives and returned it, thinking it wasn't much better than the cheap $30 Presto one I have been using. Fast forward to last week, and I pulled out a cheap Mercer knife I have as a backup that was sharpened with the Chef's Choice and it was way sharper than my Victorinox sharpened with the Presto. The difference was obvious. I have wet stones and other manual sharpeners, but I was pretty surprised how sharp that $15 knife was after using this.

I also just ordered a short time ago when it reappeared in stock. Thanks for the endorsement. Looking forward for an easy way to keep my knives sharp

In for one to try. Thanks for the endorsement dolsey01. This system looks a lot less intimidating and safer to use than the Work Sharp system that I have.

I had this style of sharpener years ago but stopped using it because i could not sharpen the entire length of the blade. The bolster would always get in the way, causing the blade to lose contact with the sharpener right at the heel. Bad for a chef's knife where you want to be able to rock it to slice and the protrusion at the heel prevents full blade contact.

I never figured out how to do it without causing that issue.

I have the same issue, and don't use it much for that reason

Aren't these suppose to be really bad for your knives?

TBH, I have stones, and as much as I enjoy sharpening my knives by hand, this is so much easier. Supposedly, the wear on the knifes are higher with this device, but, I am no chef, and I doubt the knives will wear out in my lifetime.

My recommendation is to sharpen as much of the blade as possible, and touch up the edge near the bolster with an abrasive stone.
