Will it make the crispy skin on the outside of the grilled meat too wet and soft?

Yep. But that will happen if the meat is in this, or wrapped in foil or butcher paper, in a towel, in an insulated cooler. That's a method thing more than a tool thing.

This is better suited for large chunks of meat like brisket and pork butts that require resting times and/or hold times after removing meat from the smoker. Resting times let the meat finish cooking in its own residual heat and to allow the juices be absorbed back into the meat fibers so the meat is as moist as it can be. If you've ever sliced into a chunk of meat and the juices run out from the slice you just made, the meat needs to rest longer in a bag/blanket like this. You could use it for smaller things with skin, like chicken or turkey. It will help keep the meat moist but it's not going to improve any external crispiness unless the bark is really set firm.

While this looks to be a well-made bag, there are many things you probably have around your house that would work just as good without buying a specialty item. For years, I used a large reusable insulated freezer bag from Sam's Club, has a zipper top and handles. Worked really well and didn't have to worry about the smoke smell ruining something more valuable. I think they're like $4 in the store. You can also use a cooler with a lid - just wrap your meat in foil or butcher paper and store it in a cooler for a few hours until it's time to serve.

Bottom line: Always remember when cooking meats to budget time for the important resting period at the end.

One thing I always wonder about these bags is how difficult is it to clean them out. Seems like an interesting idea in theory, but the nightmare of cleaning them might make them kinda impractical.

This is going to be a PITA to clean.

Two better options:
  • Use your cooler. It's portable. It's highly efficient - meat stays hot for hours. You can even get a dedicated, used cooler on the cheap. The one I use doubles as a sous vide cooler thanks to a hole saw and some spray foam. It's awesome!
  • Use your oven on warm. Unlimited hold time!
