Can I use this battery to connect to my power on my C2000 gen 2 to recharge the unit giving me extended run time? Almost like an extended battery?

I am assuming I would have to purchase an inverter or something to make it plugable like a wall socket

This battery could be input into the C2000 gen 2 through the XT60 PV input. That input can accept from 11-60V DC. That would only extend the runtime, but not recharge the external battery. Recharging would have to be done manually and separately.

Two of these could be put in series and connected to the expansion battery port, but that's something that does require some knowledge of electricity.

How do people use this compared to something like a Jackery, Bluetti, etc? There aren't power ports. It almost looks like a car battery.

I'd say you either want 2 of these and a 48v inverter or 1 of these and a 24v inverter to use for camping. Its a good deal though. Just need an inverter to use ac to power or charge devices.

Devices like a jackery are an all-in-one unit that combines a battery, inverter, charge controller, etc. This item posted is just a battery. People will use it to DIY battery backup systems. This can also be used to DIY expansion storage on a jackery type device.

The picture shows them stacked but are they really stackable due to the posts?
