J.A. Henckels (also produce knives under their Zwilling brand) can be very very good knives. But the company also has budget lines that are not as good. This, unfortunately, is from their budget line of knives, and is made in China.

If you ever come across J.A. Henckels made in Germany, those are the good knives, but they tend to be 4x-10x as expensive as these listed here.

I guess a better question would be: is this actually a good deal if I have a bunch of random knives in a kitchen drawer that are a decade-plus old?

Not really. These are cheap knives, and most people are better off not getting a full knife set. Most knives in a set are never going to be used. A decent chef knife or gyuto, a pairing knife, and maybe a bread knife if you bake fresh bread is really all you need. The rest are just fillers to upsell you on knives you don't need. I've been a professional chef for 20+ years, and 99% of kitchen work is done with a chef knife/gyuto.

This 100%. I use a 7" Santoku 95% of the time. Otherwise, small serrated, paring, bread knife, 8" Chef's for large things. Rarely a 6" chefs or any other type of knife. Most people only need 3.

I think a field dress knife, a skinning knife a fillet knife and a boning knife has gotten me through start to finish.... off don't forget the steak knife to celebrate and be thankful for the harvest and hard work! Chefs kiss

If you're gonna buy Chinese knives, you can actually do much better for the price. You're getting C-Tier knives and paying a premium for the German name. Unless you really want a matching set with matching steak knives and block, you would be better off buying a generic block and just buying some much higher quality chinese knives. China makes great knives now, some of my favorites are Chinese.

One easy indicator is the logo.
  • For Zwilling J.A. Henckels look for the twin logo, used almost exclusively on knives manufactured in Germany or Japan.
  • In contrast, the "international" line of J.A. Henckels manufactured in China, India, etc al bear only a single figure logo.
Good luck!

Which many folks probably do for convenience when the manufacturer explicitly labels them "dishwasher-safe" knives 😄
