I did this once, and trimmed maybe 3 lbs of fat. Beneath that fat was meh steaks. Very little marbling. At least when it's cut and packaged you can see if it's worth buying.
What's normal price? Costco app already showing $14.99 only.
Doordash>Costco is showing $16.68.

Costco's boneless USDA Choice ribeye is drawing attention as a strong value at $14.99 to $15 per pound, especially versus regular Costco pricing around $18.99 and higher prices at Walmart and other grocers. The cut is praised for its thickness and the ability to trim it at home, with some preferring Costco's quality over cheaper alternatives. The main cautions are that marbling can vary a lot from package to package, the beef may be blade tenderized, and that process means cooking to 145 degrees. Regional pricing also seems to differ, so the deal is not equally compelling everywhere.
Shoppers who want thick ribeye steaks for home butchering, because the pack can be trimmed, portioned, and vacuum sealed into custom cuts.
It is a strong price for boneless USDA Choice ribeye in many areas, especially versus regular Costco pricing around $18.99/lb and Walmart ribeye at $19-$20/lb. Some regions see similar or lower sale prices elsewhere, so the value depends on local market pricing.
The steaks can vary a lot by package, so it helps to compare individual cuts before buying. Costco ribeyes are often thicker than some grocery-store sales cuts, but marbling can range from excellent to very lean even within the same grade.
Yes, Costco Business Center can be a few dollars per pound cheaper, though the cuts may be odd-sized. Other stores sometimes beat Costco too, such as bone-in ribeye sales around $8.99/lb or occasional grocery-store ribeye deals near $10/lb.
It is regional: some shoppers see $14.99/lb as a deal, while others report it as normal Costco pricing in their area. Local regular prices and competing grocery sales vary a lot by market.
Yes, Costco ribeye steaks are blade tenderized, so they should be cooked to 145°F. That makes them a poor fit if you prefer medium-rare, and some shoppers prefer to ask for non-tenderized cuts when available.

I got the whole vacuum package at 16.99/lb. Sliced/steak size maybe $3-5 more

Not true.
I have not seen any cuts that were Select. Google says that it may be possible in some Business Center stores.
The same as at any grocer, you should compare individual packages of the same grade for finding your preferred package.
Now and then (not normally), I have seen Choice steaks look great, and once in a while, I have seen some Prime look not the best within class for my taste in their lean-to-fat ratio.
Just don't grab a package without checking others within the same grade.
I'm no meat-cut/price expert either. That's why I wondered what regular price was.
.
I used to pick up the Costco Bill Bailey Santa Maria or Carne Asada packs for as low as $9, or jam packed at $21. Not sure when they went crazy, but now the smallest Costco BB Carne Asada is like $40 for the same size.
Safeway or albertsons still occasionally has ribeye for $10/lb or less but with bone-in, but haven't seen it since early summer. Alternates with new york on sale, or if you're lucky sometimes porterhouse and t-bones at that price in the max packs. Costco is not competitive with meat prices unless you like their quality.
Isn't choice steak sometimes on sale at Vons/safway for like $8.99 lb?
That seems about right for Texas when we lived there a couple of years ago. I do know beef is much more expensive on the east coast and $12-15 lb is a typical sale price for choice at Food Lion, Walmart and Publix. Fresh Market usually has really great deals on better cuts but you have to watch the sale bills. TBH we rarely chase deals any more on proteins because they are all so expensive any more and look for expiring marked down packages in the store and plan our weekly menu accordingly...

The Prime Ribeye steaks at the Huntington Beach location is always worse than the regular Choice ones, with little marbling. It's been like that for years there.
