I did this once, and trimmed maybe 3 lbs of fat. Beneath that fat was meh steaks. Very little marbling. At least when it's cut and packaged you can see if it's worth buying.
What's normal price? Costco app already showing $14.99 only.
Doordash>Costco is showing $16.68.

Costco's boneless USDA Choice ribeye is being treated as a strong value at $14.99 a pound, especially versus regular Costco pricing around $18.99 and higher local grocery prices. The cut is praised for its thickness and occasional good marbling, and it can be worth checking individual packages closely because fat and quality vary. The main cautions are that some packages trim down a lot, Costco beef is blade tenderized, and the deal is not especially special in every region. A solid ribeye option if you want Costco size and thickness.
Value-focused steak buyers in high-price areas, because the sale undercuts local ribeye prices at several chains.
Some shoppers report Prime ribeye can be consistently worse than regular Choice at a specific Huntington Beach location, suggesting grade alone may not predict marbling.
It is a strong sale in many areas: regular Costco pricing is reported around $18.99/lb in New York and about $18/lb for Choice, while some local grocery stores and Walmart run Choice ribeye closer to $19-$20/lb. In Denver, though, $15/lb is described as normal pricing rather than a discount.
Check multiple packages within the same grade and compare marbling, fat trim, and thickness before buying. Some packages have heavy exterior fat with little marbling underneath, while others look much better; Costco cuts are also often thicker than cheaper grocery-store ribeyes.
Yes, Costco ribeye is reported to be blade-tenderized, which means it should be cooked to 145°F for safety. That makes it a poor fit if you prefer medium-rare, unless you can find a non-tenderized cut from the butcher.
The package should be clearly labeled with its country of origin, and one comment says this ribeye is sourced from Argentina rather than the U.S. If you care about origin, check the label before buying.
I hope they do it again. They also usually do that during Easter, but this year it was more than usual.I used to stock up and freeze most of it.
Publix does the standing rib roast every year for this price. It used to be $4.99 lb/ now recently its $7.99 lb. Buy the pack, cut it yourself and vacuum seal. Trim the edges for some great burger, keep the fat, make some tallow - Its my yearly routine over the holidays. Nothing like that tallow in a cast iron skillet on the grill.
It will go on sale every Holiday including Easter. I usually pick up a Strip loin for Thanksgiving and the Standing rib for Christmas. Keep in mind the Christmas one is higher demand (sometimes cheaper).
Sources for any of that?
- it was Argentinian beef
- it was a single shipment that China rejected from a single supplier, not all beef from the entirety of Argentina.
Argentinian standards aren't the same as US standards though.

Yeah I go crazy with the whole NY strips at Costco, poke each one on the backside to see which one is softest since they have more fat trimmed off of them. Still rolling the dice on the marbling though. I can't wait for the Shoprite prime rib sales, unfortunately I think they only do Christmas and Easter. They consistently have tastier ribeyes than what Costco offers, I'm willing to have extra fat on them if they are super tasty and marbled which they always seem to be. Only one of the 3 Shoprites near me will cut them into steaks for me as of last year. Cutting up ribeyes without the butcher band saw is not easy. I wind up with 3.5 inch thick steaks to avoid hacking the bone area apart.
I think Costco still blade tenderizes their beef. Not really a fan of that process. The Internet says you can ask the butcher if they have non tenderized cuts, but that seems like a bother.
Not the best sale price. I think regular price for Costco choice is around $18/lb and prime is around $25/lb. Hopefully they bring back the sale of $75 off an entire slab of prime ribeye, got that earlier this year and it brought prime down to around $16/lb. Now that was a deal!

Isn't choice steak sometimes on sale at Vons/safway for like $8.99 lb?
The $8.99 deal is for bone-in ribeye. It's still a great deal. They usually have a limit on the number of steaks you can buy. I always talk to the butcher and get them to cut 3 2 pound steaks. Safeway has been consistently been running the $10 off of $50 digital coupon too. So you can get your meat deal down to $7.20/lbs? The last time they ran that deal, it was August 2026 I think. I wonder if we'll see it again before Christmas. They usually run a ribeye roast deal right around then.

I buy my streaks from Costco and was very disappointed to learn this. You have to cook blade tenderized steaks to 145 degrees so if you like your steaks medium rare, you should not buy from Costco
