I have a set of this line of Tramontina knives... I am not a chef, I am not even a cooking enthusiast. I just want some knives that do what they need to do. This is one. I use the bigger 7" maybe regularly -- yesterday to cut up chicken breast. Recommend.

52 +/-2 HRC??? Isn't that like, really freaking soft for a knife? I think standard German stainless (or the 5cr10mov Chinese equivalent typically starts around 56-58 and is considered a bit soft to begin with, right? I'd imagine this would need constant resharpening.

It's more than likely 420HC. Yes, it's soft and will require constant sharpening.

Tramonita has probably the best low-mid priced knives but remember it's pointless to get nice knives if you don't bother sharpening them

But in the pics, they're chopping green onions on a piece of slate.

I laugh when I see glass cutting boards being sold. Yes this is low end soft steel that will dull quickly.

I would argue Mercer/Victorinox are far better for the price. Most come with X50CrMoV15 which is more than decent for sub $30 price range.
