I cooked pork jambalaya for dinner tonight. I diced some thick-sliced smoked bacon and rendered it in the pan. Then I sliced a huge link of andouille from Bourques in Port Barre, LA [bourquespecialties.com], and fried that in the rendered bacon grease. Finally, I chopped thin-sliced Virginia ham and threw that in the pot along with chopped white onions and green onions, chicken broth, and rice. I seasoned it all with sweet paprika, smoked paprika, white pepper, garlic powder, thyme, oregano, and basil.

I received two of the bhut jolokia "ghost peppers" from VQ today, but I wasn't going to use those in this dish. The andouille from Bourque's had enough cayenne pepper that I didn't need to add any heat, it was hot enough already.

mmmM jambalaya! Hope those peppers are good. I am tempted to ask for one but I know it will just be bad for me. I have trouble enough with the Crohn's and CDiff.
