Yeah, I guess I've got the opposite problem. I've been overweight/obese my whole life. So losing weight has been a constant battle. I'm used to dieting. laugh out loud

i use the stuff out of the box too. would seem like such a hassle to make it all from scratch, milling corn and such. Smilie

I like bacon just fine, but I don't love it. I can think of other things I would rather eat. DH and I were talking the other day about the American obsession with bacon and how we don't get it laugh out loud

I only recently started making my own cornbread. Like, maybe the past year and a half? I grew up on Jiffy. God bless .35 a box Jiffy.

I use cornmeal, usually a mixture of fine and coarse cornmeal.

I am going to the market before I go home tonight (I call it the market because it is a small place that is family owned and only sells produce and meat). Gotta pick up some veggies for dinners this week. Not sure what I am making tonight. Either a shrimp farro pilaf, spinach lasagna, lemon marscapone spaghetti or black bean salad.

Was that your asparagus pics earlier? Here's something good to use your bacon for, and pretty too. DH can probably have it on his diet. Take fresh asparagus spears (I use the 'baby' ones) brush them with olive oil, sprinkle with sea salt and cracked pepper. Tie 3 or 4 up with a piece of bacon that you have cut in half. They look like a little bundle. either grill them or bake them on a baking sheet. They are so good.
