When these guys opened their first location in Charlotte (near my office!) I tried their pizza the first day and KNEW they'd do well. Their dough is mixed from scratch every day and hand-tossed. When cooked it has the perfect "tooth" or texture when you bite into it. Three years later and they won the Charlotte Observer's first best pizza in town competition. I wasn't surprised, I had been telling everybody about them for years.

I totally agree and know what you mean. I like it authentic.
I hate DESPISE places like pizza hut, Dominos, Papa Johns etc....IMO it's all rubbish.
