this is one of my favs of his. instead of horseradish (i just don't like it ) i use equivalent of srirachi [huyfong.com]
Here is our recipe for Lemon Pepper Grilled Salmon.
* 4 equal-size salmon fillets (about 1 3/4 lb. total)
* 1/2 cup Safeway SELECT Jazz & Spice Lemon Peppercorn Marinade
* 3 tbsp. minced fresh basil leaves
* Fresh basil sprigs (optional)
1. Rinse salmon and pat dry. Place fillets in a gallon-size resealable plastic food bag and add marinade. Close bag and turn to coat fish equally. Set aside and let stand for 20 minutes.
2. Remove salmon from marinade; place fillets flesh side down on a lightly oiled barbecue grill above a solid bed of hot coals (you can hold your hand at grill level 1 to 2 seconds) or on a gas grill on high heat. Discard extra marinade. Cover grill, open vents, and cook salmon, turning once, until opaque but still moist looking in center of thickest part (cut to test), 8 to 10 minutes.
3. Remove salmon from grill and transfer to dinner plates. Sprinkle each equally with minced basil. Garnish with basil sprigs if desired.

Classic Baked Chicken Recipe
Ingredients
-3 to 4 lb chicken, cut into 8 parts (2 breasts, 2 thighs, 2 legs, 2 wings) excluding the back
-Olive oil
-Salt and freshly ground pepper
-1/2 cup of chicken stock* or white wine for the gravy (optional) DoYouRemix note: I used chicken broth
Method
1 Preheat oven to 400F. Rinse chicken pieces in water and pat dry with paper towels. Coat the bottom of a roasting pan with olive oil. Rub some olive oil over all of the chicken pieces in the roasting pan. Sprinkle both sides of the chicken pieces with salt and freshly ground black pepper. Arrange the pieces skin-side up in the roasting pan so the largest pieces are in the center (the breasts) and there is a little room between pieces so they aren't crowded in the pan.
2 Cook for 30 minutes at 400F. Then lower the heat to 350F and cook for 10-30 minutes more (approximately 14 to 15 minutes per pound total cooking time) until juices run clear (not pink) when poked with a sharp knife or the internal temperature of the chicken breasts is 170F and the thighs 185. If your chicken pieces aren't browning to your satisfaction, you can put them under the broiler for the last 5 minutes of cooking, until browned sufficiently.
3 Remove roasting pan from oven. Remove chicken from roasting pan to a serving plate. Tent with aluminum foil and let rest for 5 to 10 minutes before serving.
4 To make gravy for the chicken, take the roasting pan with its drippings and place on a medium setting on the stovetop. Use a metal spatula to scrape up the drippings stuck to the bottom of the pan. Add a quarter cup of white wine or chicken stock* to the pan to help deglaze the drippings from the pan.
Pour the wine/stock and dripping mixture into a small saucepan (chicken broth works just as well) and heat on medium high to reduce to desired thickness.

California Pizza (a dessert of awesome proportions! )
Can be cut into 12 pieces if you're very careful.
1/2 cup apple jelly
1 box yellow cake mix
2/3 cup graham cracker crumbs
1/2 cup softened butter
1/2 cup chopped walnuts
1 egg
3 oz. cream cheese
1 cup whipping cream
1/2 cup sugar
blueberries
strawberries
kiwi fruit
bananas
Mix cake mix (dry), graham cracker crumbs, butter, walnuts and egg together. Press into a pizza pan. Bake at 350 degrees for 15 to 20 minutes or until lightly browned. Let cool for 10 minutes then invert onto a tray. Let cool completely.
In mixer, mix cream cheese until softened. Add whipping cream (having it in freezer for 20 - 30 minutes prior helps it whip nicely) and sugar. Mix until soft peaks form. Spread over cooled crust.
Arrange sliced fruit (I prefer blueberries in center, then strawberries, kiwi and ringed with banana slices for best appearance) and brush with melted apple jelly (to preserve fruit).
*The crust will break if you try to slice too many pieces.
Double Layer Pumpkin Cheesecake adapted from here [allrecipes.com]
Cheesecake lovers will applaud this addition to the Thanksgiving dessert selection. Cinnamon, cloves and nutmeg spice the pumpkin-cream cheese batter baked in a graham cracker crust. Serve topped with whipped cream.
INGREDIENTS:
Graham Cracker Crust
2 c graham cracker crumbs
1 stick butter
c white sugar
Filling
3 (8oz) packages cream cheese, softened
c white sugar
tsp vanilla extract
2 eggs
c sour cream
c pumpkin puree
tsp ground cinnamon
1-2 pinch ground cloves
1-2 pinch ground nutmeg
1 tbsp spiced rum
c frozen whipped topping, thawed (I used Reddi-whip, and then topped with cinnamon-sugar = beautiful presentation and it covered up any flaws)
DIRECTIONS:
1. Preheat oven to 350 degrees F.
2. Combine graham cracker crumbs, butter and granulated sugar in bowl. Press into 10in springform pan or 13x9 pan.
3. In a large bowl, combine cream cheese, spiced rum, sugar and vanilla. Beat until smooth. Blend in eggs one at a time. Fold in sour cream. Remove 1 cup of batter and spread into bottom of crust; set aside.
4. Add pumpkin, cinnamon, cloves and nutmeg to the remaining batter and stir gently until well blended. Carefully spread over the batter in the crust.
5. Bake in preheated oven for 1 hour, or until center is almost set. Turn oven off, prop door open, and let cheesecake sit for another hour. Refrigerate for 3 hours or overnight. Cover with whipped topping before serving.
I made two of them, one in the springform pan and one in the 13x9 pan. I haven't tried it with the whipped topping yet, but the cheesecake turned out yummy. It could have been a little sweeter, I think, but with the whipped topping, it'd probably be perfect. The only thing is, that I put a pan of water in the stove with the cheesecakes (on a separate rack, to create a humid environment), and the 10in pan cheesecake STILL cracked
For those who are short on time and have a crockpot
Ingredients:
1 can (14oz) Swansons Low Sodium Beef Broth
10oz water
1 packet McCormick's Beef Stew Seasoning (I got the Hearty Beef Stew Seasoning cuz that's all Meijer had)
2 bags of Meijer brand stew vegetables [meijer.com] --> includes potatoes, pearl onions, carrots, and celery*
1 cup green peas
2lbs stew beef
1/4 c flour
*If you have the time, you can use fresh veggies (recipe calls for about 5 cups total veggies).
Directions:
1. Mix beef broth, water, and seasoning in crockpot. Add veggies (except green peas).
2. Coat beef chunks with flour, then brown on stove with about 2tbsp oil (more as needed).
3. Add beef to crockpot and stir.
4. Turn on crock pot (4 hours on high).
5. About 10-20min before the stew is done, add in the green peas and stir.
6. Let it finish cooking, then enjoy
It was good...I think some of the chunks of beef were a little too big, so they ended up a bit drier than the smaller chunks. I do feel like something was missing though, maybe a little more salt? Next time, I'll try with the regular beef broth vs low-sodium. This seems like it would be yummy with a crusty piece of bread or in a bread bowl on a cold winter night

Cauliflower Cheese
Try wherever possible to use English Mustard AND a good mature Cheddar cheese in the sauce, it DOES make a huge difference to the taste, and other types of mustards & cheeses do not work as well.

SERVES 4 -6
*note: I could not find meyer lemons so I used regular lemon and added 1/4 tsp sugar. Also, couldn't find hazelnuts.
1 teaspoon Meyer lemon zest (from about 1/2 lemon)
juice from one Meyer lemon (about 1/4 cup)
1/2 cup mascarpone cheese
1/2 teaspoon salt
a few grinds of fresh pepper
1/4 teaspoon freshly grated nutmeg (used pre-ground)
1/2 pound spaghetti (I used whole grain spaghetti)
5 cups (loosely packed) fresh spinach, washed, spun dry, and roughly chopped (don't have a spinner so I put it in the colender and then patted it with paper towels)
1/2 cup chopped, toasted hazelnuts
Combine the zest, lemon juice, mascarpone, salt, pepper, and nutmeg in a bowl. Whisk to combine.
Bring a pot of water to boil and salt generously. Cook the pasta until al dente, taking it off the heat about 1 to 2 minutes before you would normally remove it. Drain, reserving about 1/2 cup of the pasta water.
Return the pasta to the pot, and set over low heat. Stir in the mascarpone sauce. Add the spinach and toss so that the spinach begins to wilt. Add about 1/4 cup of the pasta water (more if necessary) to keep the sauce fluid but not too watery. Continue to cook and toss until the spinach is cooked. Add the hazelnuts and stir to combine. Serve immediately.
