Anyone got any recipes special for Easter?
Anyone have a favorite recipe they wouldnt mind sharing with the lounge crowd. I have been trying new recipes lately to try and increase my food menu variation, but just cant really think of any.
I will start the sharing
Chicken Enchiladas (feeds 6):
ingrediants:
1 pack of large flour shells
1 can of family size cream of chicken soup
1 can of family size cream of mushroom soup
1 container of 16 oz sour cream
2 lbs chicken breasts
1 16 oz package of cheese
1 large onion
pepper
salt
garlic
hot sauce
salsa (medium or mild, personal preference)
preperation (for enchiladas):
dice chicken and begin cooking in medium saucepan
add diced onions (to taste)
add garlic powder or salt (to taste)
add hot sauce (to taste)
~1/2 cup salsa
add ~1/4 of chicken per shell and wrap
place shells in large casserole pain (13x9)
preperation (for sauce):
add the soups and sour cream in one large pot and bring to slight boil
final preperation:
pour gravy over prepared enchiladas and sprinkle cheese over top
cover for 30min (or until cheese begins to melt)
uncover for an additional 10-15min or until cheese begins boiling (I sometimes let cheese SLIGHTLY brown)
SERVE and ENJOY!

A gumbo recipe for the crockpot.
INGREDIENTS:
* 1/3 cup flour
* 1/3 cup cooking oil
* 3 cups chicken broth
* 12 to 16 ounces smoked sausage, sliced about 1/2" thick
* 2 cups chopped cooked chicken
* 2 cups diced cooked chicken
* 1 to 2 cups sliced okra
* 1 cup chopped onion
* 1/2 cup chopped green pepper
* 1/2 cup chopped celery
* 4 cloves garlic, minced
* salt, to taste
* 1/2 teaspoon pepper
* 1/4 teaspoon ground red pepper
* boiled white rice
PREPARATION:
For roux, in a heavy 2-quart saucepan stir together flour and oil until smooth. Cook over medium-high heat for 4 minutes, stirring constantly. Reduce heat to medium. Continue to cook, stirring constantly, for about 15 minutes more or until roux is dark reddish brown.

Let roux cool.
Add chicken broth to a 3 1/2 to 6-quart slow cooker. Stir in roux. Add sausage, chicken, okra, onion, green pepper, celery, garlic, salt, pepper, and red pepper. Cover and cook on LOW for 8 to 10 hours, or HIGH for 4 to 5 hours.
Skim off fat. Serve with hot cooked rice.
Makes 6 servings.
Take an Avacado out of the skin, mash it up into a bowl with a tablespoon of mayo / miraclewhip, a dash of lemon juice to make guacamole (tastes way better than storebought
Spread it on a flat piece of pita bread nice and thick. (if you don't like guacamole or are to lazy / cheap to make it or buy it, use spaghetti sauce )
Take a strip of ham / pepperoni / etc sliced meat and lay it on top of the guacamole.
Here's where you customize it to make it hella tasty, put lots of random vegetables on top, I like to use bell pepper, tomato, mushroom, onion, cucumber and broccoli, but the possibilities are pretty much left to your imagination, it all tastes good. Then you can add stuff like pineapple, shrimp, avacado slices, various types of meat or whatever.
Smother shredded cheese all over the top.
Have the oven pre-heated to broil at ~350F degrees, put your pita bake on a cookie sheet, stick it in the oven, and be sure to leave the oven door open about 2 inches. You want to heat the entire pita very evenly, but without burning the cheese. Leave it until the cheese gets slightly brown. This is usually about 5-7 minutes. Smoked Spread
1 lb. Smoked Trout or Salmon 16 oz Cream Cheese Softened 1 cup Mayonnaise Tbsp Dijon Mustard 1/3 Tbsp Lemon Juice 1 tsp. Dill weed couple of pinches Freshly ground pepper
Remove skin and bones and finely shred salmon. Add Softened cream cheese in small chunks. Process all ingredients, a food processor is recommended, but if cheese is soft (nuke it for a bit) it is easy to blend by hand.
Preetis Lentil recipe
Here's the recipe for whole black [actually dark green when raw] lentils:
(just for info: they are called whole moong/mung Dal in Indian)
t= teaspoon-5ml
T=tablespoon 15ml
Ingredients:
30 oz lentils
1 med. sized onion finely chopped
1 med. sized very tomato finely chopped
2-3 T cooking oil
salt to taste
curry leaves
1 t mustard seeds
2 t cumin seeds
4 small green chillies-finely chopped
ginger garlic paste
cilantro-washed and finely chopped
1 T lime juice/squeezed lemon
Powdered spices:
1 t turmeric powder
2 T red chili powder
2 T cumin seed powder [dhanya powder in Indian]
2 t Garam Masala [ literal translation hot spice in Indian]
2 t Special Garam Masala for Lentils
Preparation:
Soak the lentils in water for 6-8 hrs. Pressure cook them until 1 whistle. Don't discard the brown water yet. We will use it wherever water is needed.
Take a deep pan [not flat] .
Pour oil and heat on med/high flame.
As soon as its warm, add the mustard and cumin seeds. they should crackle.
Add curry leaves & green chilies
Add onions and ginger-garlic paste. set flame on med.
After this has become golden-brown in color, add tomatoes.
When these start to become mushy, add the powdered spices one by one. mix well.
Add salt to taste. 4 oz water -just enough to prevent the mushy sauce from getting overburnt.
Now add lemon juice.
Last, add the boiled lentils and just enough water to help blend the spices with the lentils.Simmer on high flame until homogeneous.
Garnish with cilantro.
Note: if you want to make it more like a soup, you will need to add more water after you add the lentils. accordingly, the salt and powdered spice quantity should increase.

Finnish Mushroom-omelette roll
Omelette batter:
- 6 eggs
- 5 dl milk
- 1 dl wheat flour
- 1 tsp salt
- 1/2 tsp white pepper
Filling:
- 3 tbsp butter, margarine or cooking oil
- 1 l chantarelles, hedgehog mushrooms, ceps
- 2-3 onions, salt, black pepper
- basil or thyme
(- a little cream or cre fraiche)
On top:
- grated cheese
Preheat the oven to 200 C. To prepare the batter, first mix the flour in the milk. Beat the eggs in a separate bowl and add to the flour and milk mixture. Spice with salt and white pepper. Line a high-edged baking plate with greaseproof paper and pour the omelette batter on the paper. Bake in the oven until light brown. Overturn the omelette on another piece of greaseproof paper and remove the paper from the bottom. Chop the onions for the filling. Fry the chopped mushrooms in hot oil, add the onions and let cook until the liquid has nearly evaporated. Spice with salt and pepper, and, if you like, basil or thyme. (In case you prefer the filling to be more saucelike, add a little cream to the mixture and let cook for a while). Check the taste. Spread the mixture on the omelette and roll the sheet up. Carefully move the roll on a greased ovenproof plate and sprinkle grated cheese on top. Heat the omelette roll in 200 C before serving.
