We have magic skillets. laugh out loud Just kidding. If I am going to fry quite a bit I will use my 5 qt. dutch oven instead of a skillet. It's the same diameter and I use the same amount of oil so I'm not submersing the stuff or frying it any differently. Just using a pan with taller side to keep some of the splattering down.

Other than that, there is some splattering. I keep wiping stuff down while I cook. I'm standing there anyway and it's much easier to keep it wiped down while everything is hot than to wait til later. Plus, I don't have a yucky mess to go back to.

Chit...and here I thought you were going to tell me about a T coupon that played nice and a magical skillet. Now I find all my hopes and dreams are dashed. On the upside, you gals all live on my puter screen and that makes you all magical nod

Does anyone have a tried and tested recipe for egg fried rice...I thought I will ask here first before I google
My HIT recipe, here it goes, even i blogged once in my food blog(which i did long ago), and had so many good comments on it...

Ingredients:
Basmati rice – 1 ½ cup
Onion – 1, medium, thinly sliced
Beans – 15 counts; sliced French-cut strips
Carrot – 1, medium, sliced thin 2" piece
Capsicum- ½, medium, thinly sliced 2" piece strips
Cabbage – 4 leaves, thinly sliced length-wise strips
Ginger – 1" piece, thinly sliced
Garlic – 4 pods, thinly sliced
G. chillies – 2, long, slit lengthwise
Spring onion – 2, cut into ½ inch strips
Soya sauce – 2 Tblspn
Hot and sweet sauce – 2 Tblspn (from Maggi brand)
Tomato ketchup – 1 tsp
Red chilli sauce – 2 tsp
Black pepper – 1 tsp
Jeera – 1 tsp (coarsely powdered with mortar and pestle)
Egg – 1, scrambled with salt and pepper
Olive oil – 2 tsp
Salt – as per taste
Method:
Cook rice with 21/2 cup water in rice cooker. Add a drop of oil or ghee so that rice turns out to be little fluffy and seperate
Chop all vegetables thinly sliced into 2"pieces evenly.
Scramble egg with a pinch of salt and pepper.
Slice ginger and garlic very thin strips.
Microwave all veggies except green pepper. Heat oil, when smoky hot add ginger, garlic, onion, and half the spring onion and green chillies, fry briskly. When onion turns little limp here and there, add in the all the veggies, and salt. Fry tossing them in the pan so that they are mixed very well. Now add in all these sauces. Mix well in very high flame. Add cooked rice now, toss again over high flame. Now add the scrambled eggs, toss again. Add jeera and pepper powder. Cook till done, garnish with the remaining spring onion. Serve hot with Cauliflower Manchurian or chilli chicken.

QUICK TIP: Cook the rice, seperate those grains, leave it in fridge for atleast half-a-day. The moisture content of the rice is lost, so will be dry to stirfry.

All this talk of frying is making me hungry for onion rings. Not sure I have the ambition to make them. Now if I could just convince my husband that onion rings ARE a complete meal. Maybe I will have another coffee truffle and think about it.

Hey, is there any way to get any kind of a deal through Dell on a laptop warranty? My warranty has expired and the last time I checked it was somewhere around $250 to add another year. I need to call them and do it one of these days. I didn't know about Squaretrade when I bought it. My touchpad has died and I am using a USB mouse. I had kind of figured I would just buy the part and replace it but the laptop has done a couple weird things lately so I'm thinking a warranty might be the way to go instead.

Whenever you get here and we get them breaded up and fried. Pick up some sliced mushrooms on the way and we will do some of those too.

Question for you gals..when you are frying stuff, how do you get it to NOT splatter everywhere? I have a fryer, but I hate using it. Takes too long to heat up and it seems like I burn everything. Well not really, but you have to babysit it constantly.
I just use 2-3 hand towels spread out on each side, and it helps really

We totally cheat and use a simple recipe Fried Rice [about.com] then I add in leftover cold veggies like peas, diced carrots, diced onions, etc. I start out with cold, leftover rice nod

Went to T, ignored the clearance and just got two toothbrushes and 2 toothpastes to go along with my TP and Paper Towels. me thinks there's an SDer in our area for sure. Oral-b was wiped clean Scratchchin

AND it's cold here....Cold Yeah, Yeah, Yeah, not as cold as the frozen tundra of the north, but hey, I live in FL-not Maine Annoyed

Hubby got home. I said, "I don't suppose you'd like onion rings for supper". His response, "That's fine...... what are you going to have with it?".laugh out loud

Now, do most of you think you need to have multiple items for a meal? Not all the time, but I am perfectly happy to have one item for supper. I don't always need anything with it. Tonight, that one item could onion rings. I think those Betty Crocker boxed potatoes make a dandy meal too. All by their lonesome.

I'm typically an easy-to-please eater. DH prefers more stuff/variety. *shrug* I guess that's good. I'd probably eat PB&J every day for the rest of my life if left to my own devices.
