Sorry, I just received a package from FleaBay this afternoon, so I had to open it and cut up/throw out the box. I also had a leftover meatloaf sandwich for dinner.

What's up?

White beans (canellini) are wonderful with ham. So are green split peas. Chopped celery and carrots and onions are a must for any soup, as well as using chicken broth instead of water. A bouquet garni of fresh herbs is also a requirement.

Put the cleaned/picked ham bone in a pot along with the vegetables and herbs and broth. Boil/simmer for an hour then add the beans and continue to simmer until the beans are tender. Bingo, you're golden.

I agree with everything you've listed, and that's the direction I was heading! Big Grin

What about cabbage, or red potatoes? Turnips? Mama is about to harvest some bok choy and pak choy from her garden, can I use some of that? laugh out loud

If you cut the cabbage into a small dice and don't overdo it, it's good in any soup. Potatoes are good for thickening a soup, but they generally fall apart. I don't do turnips, but again, a small dice and judicious use of the ingredient is key. Otherwise, either the cabbage and/or the turnips could overpower the taste.

Nope, you've got it all. Soups are easy to make, it's all a matter of balancing the ingredients and flavors.
