So I pulled out the bacon from the freezer thinking it was just a giant long chunk of bacon that was pre cut, but the butcher doesn't cut the bacon I guess. It was just 3 feet of pig belly. So I put it in salt water for about 5 hours and then threw it on the smoker for another three. This shit is soooooooo good. I left just enough moisture and fat on there to make it perfect for the skillet in the morning, and I have about 16oz of smoked bacon grease for making awesome gravy with. Can we say biscuits and bacon gravy? Whee

Maybe I'll get my bacon smoked again tonight. Bounce
