Because there was a time when people cared more about the message than the grammar, IMO. They weren't used widely at the time because the English language wasn't standardized at the time. They didn't have MLA and APA formats or anything like that. Plus, all of the flags back during the revolution were hand made. It was a waste of time and resources to put the apostrophe in there, and of the very few original flags that survived, most if not all didn't include the apostrophe.

Yeah I've made pancakes with nut milk- not sure about this kind before. How's the texture?
