I made a huge pot of Cajun pork jambalaya [fabulousfoods.com] this morning. It took forever to chop all the vegetables (onions, bell peppers, celery, garlic) and the meats (bacon, pork roast, ham, andouille sausage, tasso) but once that was done, preparation was fairly easy. Render the bacon and brown the seasoned pork roast and ham in the bacon fat. Add in the bell pepper and celery and saute them until soft, then add the onions and garlic. Seasoning was Tony Chachere's Creole blend [tonychachere.com] with extra white pepper, smoked paprika, ground allspice, and fresh ground black pepper. It takes a while for the vegetables to cook down, but as they do, the meats become incredibly tender. Now that the stew is simmering, I'm steaming rice to blend with it all.

Aren't you glad you've already had lunch?
