So what's in a Mexican pie?
I couldn't use the data from my trip to lunch, because I didn't get a GPS lock until I'd already driven a quarter of a mile. On the way back, GPS said 2.9 miles, dash odo said 2.3, and computer odo said 2.9.
All my orders from sears shipped except for one item!!!
Ground beef, onion, and bell pepper cooked with taco seasonings
Spanish rice
Black beans
Corn
Diced tomatoes and green chilies
Mix it all together, bake it for half an hour. Top it with shredded pepperjack cheese and crushed Lime Tostitos. Bake another 5-10mins to melt the cheese.
On your plate, top it with fresh chopped tomato, shredded lettuce, and sour cream.

several years ago, i had a huge craving for mexican food while at work. so i browsed probably a hundred recipes over the course of the day, printing out 10 or 12 of the ones i really liked. then i went to the grocery store and bought anything i could possibly need to make whatever it was i thought i was making that night.
what came out of that was a messy kitchen, and something i called Mexican Pie.
