First, use only "old fashioned" grits, never "quick" or "instant". They take longer to cook, but are worth it, for the flavor and texture. Second, use 1 cup of dried grits, and 5 cups of boiling salted water. When the salted water begins to boil, add the grits, stirring (with a whisk) frequently until they resume boiling. Lower the heat, add a tablespoon of butter, and three or four cloves of crushed/chopped fresh garlic. Continue stirring the grits another 10 or 15 minutes, then turn off the heat and cover with a tight fitting lid. After 15 to 20 minutes, remove the lid and whisk in 1/4 cup of heavy cream (or milk, or half-and-half) and a cup of freshly-grated cheddar cheese.

As long as you stay away from instant grits, you'll be fine. Quick grits take less time to boil/simmer, about five minutes instead of 15 to 20 minutes. But they don't quite have the texture/body of the old fashioned grits.
