Pork shoulder roasts went into the smoker about 9 am, and the coals got hot enough to start cooking 30 minutes later. I'll take them out of the smoker about 1:30 to 1:45, pull them apart, then wash them with some local Eastern NC style sauce. It's primarily vinegar and crushed red pepper flakes, to which I added a good bit of brown sugar, smoked paprika, sriracha sauce, and two whole lemons, juiced and then quartered. It's been simmering for almost an hour now. The baked beans went together quite easily, with a bit of ketchup, mustard, brown sugar, and hot sauce. Once they come to a simmer, I just put them on the warmer until the pork is done. Potato salad required a bit more effort. Mostly, chopping the boiled eggs and preparing the sauce. Mayo, Durkee's sauce, mustard, hot sauce, onion powder, garlic powder, fresh-ground black pepper, egg yolks, and a teaspoon of chopped pickled jalapenos. It's been chilling in the fridge since about 10:30, should be nice by 2 pm, when we expect to be eating. The cole slaw turned out well after resting in the sauce overnight. Mrs. Frog said she could eat it all this morning, but knows it's to put on her BBQ sandwich this afternoon.
I'm finally resting, after getting started about 7 am this morning. The coffee was almost perfect. All it needed was to be a bit stronger. But it got me awake and outside early enough, cleaning out the smoker and loading it up with the pork roasts.
Did I mention it's gonna be a lazy afternoon?

I'm obsessed with TJ's dried chile mangos so I prepared some of them along with some plain. Should be interesting. And a couple trays of clementines.
And I made a tray of joyio's famous egg bake for breakfast
