well, though i claim to be southern, since i was born in memphis, i'm a total yankee smoker... i use my gas grill to smoke stuff. i fire off the back burner on high, put a cake pan on the burners, put dry hickory chunks in the pan over the burner, then once the chunks start smoldering i back off the heat to get it down to about 250. i put the food being smoked on the front left of the grill. i smoke shoulders for about 6 hours (adding wood chunks every hour or so), then wrap tightly in foil and throw it in the oven for around 9ish hours on 225.

you seem like an industrious woman. i think you can handle it.
