The water is probably to cut the stout. Alot of beer brats will use miller lite or what have you, but the stout would be pretty heavy to not cut with the water.

I used Newcastle Brown Ale to cook my brats two weeks ago. Definitely enjoyed drinking what was left over. Also definitely could have used a stronger beer. :nod:

I never heard of adding water before. I go all beer.
FWIW, I make them like this:
Saute a large onion in butter (half a stick or so). Add salt and pepper and about a 1-2tsp of red pepper flakes...
