I think I see your problem there.
We buy from a local roasting company that is sold at the local grocery stores and the beans don't loose their flavor, we usually go through one bag per week.

Oiliness of the beans varies among brands, and even within bags of the same lot from the same brand. But the French Roast process does tend to bring out a lot of the oils from the beans.

Most people who sell supposed French Roast don't have a clue, and DO burn the beans. My friends in Baton Rouge know what they're doing, and their coffee is nowhere near burnt.

Along the same lines, I prefer my steaks medium rare, and my wife likes hers well done. Or, charred to a crisp. Beyond acceptable from a culinary perspective.

Dark roast is pretty good, lately I'm more of a medium roast myself.
Also, if you put milk or sugar in your coffee, don't buy beans to grind them yourself....
