I thought about it briefly and might need to look into it more. My concern would be that there would be no recourse on anything damaged. Also legal issues if someone got hurt lifting heavy objects.

Have you considered hiring day laborers or packers? You could still not have to pack the truck yourself, but could save on the actual travel fees. Going full service can be very expensive.
