You are "cooking" at 65-75c, thats the same temp as some diswashers or even hot tap water. You might have some issues if you were boiling stuff in a bag.

I did eggs for the first time this past week. 145 for an hour left the yolk too runny, but 2 - 2.5 hours at 145 was perfect. Easy poached egg with no waste, just crack the shell it falls out...

You don’t need a lid. It helps if you are doing really long cooks. I use plastic wrap in a pinch. Keep an eye on water levels.
