That is correct. New cars, skins, etc but no new content such as maps, new play modes, etc. I will say though the collectors edition is worth it due to the fact that you are getting the physical game...

All commands (including boost) can be reassigned to any other button on the Switch controllers, so this is not an issue if you don’t like the default. But it definitely exists either way.

I've put in hundreds of hours across PC, PS4, and Switch, and I have no idea what you're referring to. The only arguable controller benefit goes to the PC being able to bind air roll left and right.
