Yes they did turn brown, I get them that way as well, also I want them to be thicker then that. There are some other folks that say to rinse the knife well with alcohol or such to prevent that type...

In my experience, ground beef is easier on the mouth too, vs. regular beef jerky. And it's usually easier to prep (no slicing)
