Depends on your needs. I usually only need 2 or 3 ports. But sometimes I need more, e.g. when playing around with a few Raspberry Pi's. Doesn't really hurt to have some spare ports.

Even if they used cat5/6 cable for your phone jacks, Ethernet is wired totally differently than phone. With phone cabling, everything is spliced together. They can be chained together, split, etc....
