They are fully flat until you get within about 1" of the walls, then they slope. If you're talking dosas, you want the lodge 14" baking pan. Makes the best pizzas/crepes/ and (ive heard) dosas around

Rotis / Dosa's are made on stove. Cast iron is considered very good (I think for its heat capacity). Fry pan/skillet or griddle/grill pain is best for me. You can consider dosa's like pancake.

Actually, it depends on the model. The 10.25" that I posted has a pretty abrupt angle and a wider flat bottom. The Chef's Skillet has a much more sloped sides, as does their Pro Logic.
