Id definitely get the 24 can for sous vide rather then this one. Unless you have 2 and want to do larger cooks. The 24 can still takes quite a while to bring to temp with my anova.

My tap water comes out at 114. I make sure to start at that and it only takes about 5-8 minutes with my 1000 cooker to get up to 135-139 in the 24 can one. I haven't timed it with the 33 quart one....
