You're not accounting for the increased material between Aurora and All-Clad. All-Clad D3 and D5 are same thickness but Aurora is thicker than both.

For fried eggs just use a nonstick pan unless you like it swimming in oil. For searing meats get a carbon steel or cast iron. Both will heat up faster and hotter than stainless steel.

The handle issue...this is how I adapted. Hold handle with three fingers under, thumb on top, and outer wrist bone sits in the top part of handle near the wide end. Try it out.
