Yeaaah 18" is a bit too large. It barely fits the oven and I feel like it's touching the oven door glass when the oven is closed. Should've gone for a size or 2 smaller for sure

I use a dusting of 50% corn meal, 50% flour. It works for me. Wood usually releases better than metal, but metal is easier to use/clean.
