This is generally true. However, because AC is a sine wave, power will vary with time. You can represent power ac as rms or peak. But yea, the equation P=IV still holds. It’s just P(t)=i(t)v(t)

Yep, maybe for a few seconds. But most inverters trip at the resulting low voltage. Even deep cycle lithium will only do 100amps.
