I think it's easier to trim after slicing the steaks. I just did this last night and vacuum sealed a bunch of individual steaks.

I freeze after sous vide and it comes out perfect. My theory on that is that the cooking dehydrates the cells a bit which gives it even more protection from freezer burn. Also, it then takes less...

I used to have a restaurant quality vacuum sealer. Then I learned to just get a big pot of water. Toss the beef in a normal zip lock and lower it into the water until the water line is at the ziplock...

If I do not have a vacuum sealer would it be best to slice and freeze immediately in separate ziplock bags? Or should I slice, sous vide in separate bags and then freeze immediately?

Probably not if your fridge’s temperature is at a constant 38-40 degrees. Regular meat without vacuum seal can last a week in the fridge.

i would slice, ziplock and freeze (use the water displacement method to get the most air out). IIRC some people pre-chill in an icebath before throwing in a freeze so it freeze quicker too. Not sure...

Honestly, purchase a cheap vacuum sealer is my recommendation. It really will help and it's worth it when you're freezing $100-150 of meat. If you can't, I'd freeze raw and throw in the sous vide...
