I'm... not sure why you would be using fishing pliers or a gripper to cut things? The gripper is to hold the fish, the pliers are to remove the hook. At most you would be cutting the filament line...

You want aluminum for saltwater. H1 is resistant, but for something that is going to be constantly exposed with a joint like grippers/pliers you're really gonna want aluminum.
