If you go to your i watch settings, select cellular, you will get the choice for both plans. I have grandfathered 55+ and it works for me.

I don't think so. Tmobile watch plans use 'Digits pairing' which is a virtual number assigns to your watch then it will be paired with your Tmobile phone line. So, it's not possible.
