In the chart you posted it shows [email protected] with 8gb, the 5600 on this machine is only 6gb, while the 5600 is faster, less vram is going to make it slower; guessing it will run same as 5500XT +/-...

Non, 1TB HDD not worth it. It will be good to change 256GB SSD to 512GB without HDD to provide some price reduction.

The 5600 should be about the same performance. The XT version is significantly faster than 1660Ti.

I think that is terrible information. It's a couple notches below the 5600XT - think more like where the Vega 56 is on that chart. It should be about the same or reasonably better than the 1660's...
