They have different heating elements. Barista Express has the older generation, and Pro, Touch, and Bambino Plus all have newer generation that heats much faster. To me that is the core element of an espresso machine and difference is well worth $100.
I almost bought one of the machines that have built-in grinder but then advised by people that the built-in grinders are barely OK (even on the $2700 Oracle Touch) and I'd better go with a simple machine with a separate grinder. Some even suggested that one should spend more on the grinder than the espresso machine. I'm not sure if I'll go that far but I'm buying Bambino Plus now and still looking for a good grinder. I've heard many people suggesting DF64.
I got the Pro for about $500 from BBB in November. I think it was worth the money. It was my first espresso machine (well, still is since I still use it). But while the default capabilities are fine, I needed to do a lot of research and buy a few things to make it truly great.

1) Buy a better basket (I use the 18-22g IMS basket): ~$35
2) Set the burrs to a finer setting in the grinder; this shifts the entire range of the grinder settings down; FREE
3) Buy a bottomless portafilter to diagnose shots ~$35-50 for a cheap one
4) Buy a scale to weigh shots ~$20+
5) Buy a better tamper (there's one made for 54mm IMS baskets on Amazon which is perfect): $35+
6) Get a WDT tool $5-35

Then watch some videos. You'll be making great espresso in no time.

in my opinion, the built in grinder is excellent on the BES870XL

In the past you could get 20% off the brevilles on sale @BBB with Beyond+. I'm still waiting for my Bambino Plus order, backordered since December at BBB for $300+tax. I almost had enough saved for an even better machine until a recent emergency 😢

I was excited to move forward with this plan till I looked at how much a DF64 costs. Our neighbor has an 870XL and uses the grinder for every cup he made me. It was solid espresso for my unrefined palate. Now I'm tempted to circle back to get the 870XL. I saw that BB&B has R-A-K CB right now too.

as MGhostSoft said, difference in heating element.

some people prefer the express because it has pressure dial which can significantly help when trying to dial in. the pro is otherwise the same as the express. no pressure dial, better heating elements.

Well, it looks like the workaround where you could use the Bed Bath Beyond + membership 20% (30% at the time) off despite the fact that it said they were excluded has been fixed... so save yourself $30 unless you're planning to get more stuff from BBB over the next year, because it's not applicable anymore.

* Clarifying it didn't work on the Barista Pro, others seem to have luck on other machines.
