In the end USB4 will be cheaper (TB licensing adds extra cost) and cables can be twice as long as TB4 at 40Gbps.
In this case, as you caveated, 64GB RAM is enough and I'd never add more. The advantage is the soldered RAM is faster (much lower latency) and more reliable not needing a connector.
I have this P16s and love everything about it (except the reversed Fn and Ctrl keys!)

This would fit the bill otherwise but I think long term a guy would work better
How would this U processor hold up for software development? I have some really large projects that take time to compile and try to max out the cpu for that, would this machine not be a good fit for that? It says it's for creators, which I take to mean power users, but that's not the same thing as code, so how would this machine compare to say the galaxy book 4 ultra , which is currently my top contender for my next machine?
appreciate any insights, as I would love to save like 1500 bucks if the performance differences aren't massive!
