I'm a 2 knife guy, and my old Henckles was lost in Mt recent move. And while I'm fine with using a 11in Filet knife on everything, it's too flexible for a lot of things. (Every spatchcock a chicken with a filet knife after your wife almost killed you for using her fabric scissors? It's exactly what you might think it would be. Lol.)
Thanks for the info. I had just thought they were all made in Germany.
Jacques Pepin has said that he has hundreds of knives but uses only three. I've observed watching him that when it's time to cut something, he picks up whatever knife is closest to his hand regardless of what it is. There are very few kitchen prep tasks where it really matters. I wouldn't make radish rosettes with an 8" chef knife of course, but such specialized situations are very rare.
