You should also be able to link your streaming music service account to the speaker. Can't remember exactly which services but at least Spotify, Amazon Music. If you have a Plex server, you can also stream from that, but it's a bit buggy/laggy
Regarding streaming from your computer, supposedly the Windows and MacOS desktop apps are being discontinued. They are to be replaced with web app, advertised to let you control your speakers from anywhere(?) This sounds to me like Sonos servers will be a proxy to your home network, which I'm not super crazy to allow
Or send music to it via airplay, from an iOS or macOS device, which is without the use of the Sonos app.
How many speakers can Airplay connect to and play simultaneously? Is it a BT connection? I want to multiple speakers, but I'd also like to try to separate the speaker (playing the music) from the connection / network protocol (?) so if possible I can mix and match speakers, upgrade, etc.

Yes. You can link two to create a stereo pair. You can also create groups of as many as you'd like for multi-room audio.
