It's trivial to bypass windows 11 "unsupported processor" limitations. Download a windows 11 iso, download Rufus, get a usb drive. This does not require expertise.
Is there any reason why I'd want to add a graphics card to these, like for bluiris or frigate etc?

Attempted to put it in my cart and got failures ..
Of course, for many the Intel AX200 is going to provide reasonable connectivity and performance relative to the price (while being reliable enough to justify installation vs. a USB adapter).
Non-Intel adapters are certainly functional for plenty of users, particularly if you aren't as worried about top-end performance and/or driver compatibility.
