yummy

I gotta add all of my friends favorite party recipe, even if no one uses it.
drool
We call it Crack dip because it is highly addictive.

6 packages Cream Cheese- no fat free stuff
2 lbs. Ground Sausage-Owens is good but feel free to swap
2 cans Rotel with the juice drained-hot is much better if you like it spicy

cook sausage on stove top and drain
Add all ingredients to Crock Pot and stir occasionally
Cook on High for 30-45 minutes and leave on warm until the Crack is gone
Serve with Tostito's scoops or other corn scoop-like chip.
(try not to eat to much)

If anyone ever tries this please PM me. I will pass your thoughts to the original chef.
You guys are the best

The recipe is great cut in thirds. That's just the original

We make something very similar.

We cook the meat prior to putting in the crockpot. Only using a block of velveeta and only one can of rotel as we don't care for too much spice. Also one can sub the sausage for a can of chili or a half pound of cooked hamburger. Wink

We make this for EVERY family function. lol

Today I made this: Banana Chocolate Chip Dessert [allrecipes.com]

INGREDIENTS

* 3/4 cup butter
* 2/3 cup white sugar
* 2/3 cup brown sugar
* 1 egg, beaten
* 1 teaspoon vanilla extract
* 1 cup mashed bananas
* 1 3/4 cups all-purpose flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1 cup semisweet chocolate chips

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jelly roll pan.
2. In a large bowl, cream butter, white sugar and brown sugar until fluffy. Beat in egg and vanilla. Fold in mashed banana. In a separate bowl, mix flour, baking powder and salt. Fold flour mixture into butter mixture. Stir in chocolate chips. Spread in prepared pan.
3. Bake in preheated oven 20 minutes, until set. Cool before cutting into squares.

The only thing I did differently was add the whole bag of chocolate chips. Blush I was in a chocolate mood I guess! I don't really like bananas but these were yummmmmmmmmmy!!

Off to make my hot wings now! Whee

Ciabatta Bread
Submitted by: Marina
Rated: 4 out of 5 by 64 members Yields: 24 servings "This is a bread machine version of the Italian classic which still bakes in your oven. Though not sour, this bread has the crisp crust and coarse crumb one expects from ciabatta."
INGREDIENTS:
1 1/2 cups water
1 1/2 teaspoons salt
1 teaspoon white sugar
1 tablespoon olive oil
3 1/4 cups bread flour
1 1/2 teaspoons bread machine
yeast
DIRECTIONS:
1. Place ingredients into the pan of the bread machine in the order suggested by the manufacturer. Select the Dough cycle, and Start. 2. Dough will be quite sticky and wet once cycle is completed, resist the temptation to add more flour. Place dough on a lightly floured board, cover with a large bowl, and let rest for 15 minutes. 3. Lightly flour or use parchment lined baking sheets. Divide into 2 pieces, and form each into a 3x14 inch oval. Place loaves on prepared sheets, dimple surface, and lightly flour. Cover, and let rise in a draft free place for approximately 45 minutes. 4. Preheat oven to 425 degrees F (220 degrees C). 5. Dimple dough for a second time, and then place loaves in the oven, positioned on the middle rack. Bake for 25 to 30 minutes. During baking, spritz loaves with water every 5 to 10 minutes for a crispier crust.

Caponata Picnic Sandwiches Recipe courtesy Giada De Laurentiis

1/4 cup olive oil
1 celery stalk, chopped
1 medium eggplant, cut into 1/2-inch pieces
Salt
1 red bell pepper, cut into 1/2-inch pieces
1 medium onion, chopped
1(14 1/2-ounce) can diced tomatoes
3 tablespoons raisins
1/2 teaspoon dried oregano leaves
Freshly ground black pepper
1/4 cup red wine vinegar
2 teaspoons sugar
1 tablespoon drained capers
1 loaf ciabatta bread, cut crosswise into 6 equal pieces
2 garlic cloves, peeled
6 slices (1/3-inch-thick) drained fresh water-packed mozzarella

Heat 1/4 cup of the oil in a heavy large skillet over medium heat. Add the celery and saute until crisp-tender, about 2 minutes. Add the eggplant and saute until beginning to soften, about 2 minutes. Season with salt. Add the red pepper and cook until crisp-tender, about 5 minutes. Add the onion and saute until translucent, about 3 minutes. Add the diced tomatoes with their juices, raisins, and oregano. Season with salt and pepper, to taste. Simmer over medium-low heat until the flavors blend and the mixture thickens, stirring often, about 20 minutes. Add the vinegar, sugar, and capers. Season with salt and pepper, to taste. Cut the bread pieces horizontally in half. Grill the bread cut-side down on a grill pan over medium-high heat until golden, about 2 minutes. Rub the whole garlic cloves over the toasted side of the bread. Add a slice of mozzarella to bread bottom, spoon the caponata on top, cover with the other bread half, and serve.
To take for a picnic: Wrap the sandwiches separately in plastic wrap or parchment paper. Chill until ready to serve, or keep at room temperature up to 1 hour.

This was dinner tonight. It was yummmmmmmmy Licklips

Here's a few more from Don't Panic

http://docs.google.com/Doc?id=dgzg76m6_0g5p9g5dq

My 3 cookbooks of choice are:

Don't Panic: Dinner's in the Freezer [amazon.com]
Super Suppers [amazon.com]
Fix Freeze Feast [amazon.com]

I have several other "freezer friendly" cookbooks, but these are my go-to choices.

I found the BEST RECIPE EVER for cornbread. And it's not really a recipe, per se.

Just take your favorite corn bread mix and mix it all up and then right before you put it in the pan and pop it in the oven, add several handfuls of chopped sundried tomatoes (find the ones that are soaked in oil). It's a perfect combination of sweet and savory.

DH and I ate almost the whole pan of cornbread last night and he doesn't even like cornbread. laugh out loud
