Are these enclsoures as easy to crack open as the 2TB Elements that Staples and Target had on Black Friday? This is a great deal for a 3TB, but I don't want to be bottlenecked by USB2.0.

You are only thinking in terms of max transfer speeds, applicable for sequential reads/writes. For random or even mixed reads/writes you would see a benefit.

where you been the last 3 years? 5400/5900 made a return as they are 'green" hitachi, wd, seagate and samsung have been heavily pushing cheap lower rpm drives and many of the hdd deals are for 5x00...

Random writes are limited by the seek time of the hard drive and the delay of the usb standard. The time for the disk to spin around isn't consequential.
